The hissing noise is indeed a vaccuum leak. It is most likely coming from
the heater/AC control valve. The switch is a combination of an electrical
switch and a vaccuum switch. The leak is either in the switch itself or
in the vaccuum connector. The connector is a rubber socket that fits over
the back of the switch and has 5 rubber hoses running from it. These
hoses control the opening and closing of the ventilation flaps under the
dash. The switch is rather difficult to get to. You have to remove the
front fascia on the center console to get to a screw holding the switch
to the panel. You then have to reach behind the panel underneath the dash.
I find it goes a little easier if you also remove the emergency flasher
switch. Once you have the switch out, examine it. It should be white plastic,
with a nice solid snap action when you turn the shaft. There should also
be some light grease on the back portion of the switch. This grease
seals the vaccuum connector and also seals the vaccuum switch. Sometimes,
the grease evaporates or migrates out of the switch, causing a leak. This
is more likely to happen on a car that has been sitting in a warm climate
for a long time. If the switch looks good, you may have a loose vaccuum line
underneath the dash, or one of the ventilation flaps has a leaking diaphragm.
Locations of the flaps and the routing of the hoses can be found in the
service guide. Replacement switches are available from any of the
DeLorean parts specialists.

well, i don't actually own a delorean (that's still a dream at this
point) so i don't know for sure how the air control dampers are actuated.
but if it's like a chevy i can tell you that the dampers are operated by
vaccuum motors. try to switch the air control around from the heater to
the dash vent to the defrost and see if the air is diverted to the proper
outlets when you move the control. if not, you most definately have a
vaccuum leak somewhere in your air control system behind the dash. of
course the fast idle you mentioned is also a tell tale sign of a vaccuum
leak. good luck. hope you find the leaky culprit.

Your hissing problem is most likely a vacuum leak in the area of the mode
selector switch. All the environmental controls run off of vacuum in order to
operate the various baffles in the air delivery system. A vacuum leak can affect
engine performance.
I had a similar problem earlier in my car and it turned out that the vacuum leak
was not in the dash from where the hissing was coming from. The leak was in the
engine compartment and the soud I heard in the dash was the air rushing through
the mode switch due to the vacuum leak.

I had my car broken into about 1.5 years ago and finding replacement door locks
was a pain. I found aftermarked '81 door locks (short key, 2-lock system) from
DeLorean Motor Center. They had a better mechanism less likely to break than the
original, but in my '83, these were not the proper locks (I still have them on
hand). I don't know if the DMC door keyblank will fit the aftermarket locks and
I don't know if DeLorean Motor Center still has them. Call and find out.
Incidentally, I ended up getting a used '83 door lock from a parted car and
getting it re-keyed to fit my original key set when I had my thief run-in.

The "Automobile Quarterly" vol.2 no. 2 has an extensive article
starting on page 192. It provides a lot of information on the company
and production of the car. The hard cover book was for the second
